Ground Beef Muffins

1. Pre heat Oven to 350 and lightly grease muffin tray

2.Beef mixture to be minced in electric Chopper or Blender

In chopper put 4 garlic cloves, half inch ginger root, 1 tbsp red wine vinegar,
3 tbsp olive oil, half cup cilantro leaves, 1/4 cup plain yogurt, 2 green chillies,

1 1/2 teaspoons Worcestershire sauce, half tsp cumin powder,

1 tsp spanish paprika, 1/2 tsp cayenne chilli powder, few mint leaves, squeeze of fresh lime jiuce,
pepper sprinkles, and 1 tsp salt. Taste the mixture after chopped and blended in Blender and add more chilli powder if needed.
Pour mixture over a pound of lean ground beef and mix using your fingers until mixture is spread evenly .
Add a sprinkle of bread crumbs if needed to make it easier to mould into the muffin tray.

3. Spoon beef mixture into each muffin tray. Make room in the centre of each beef muffin to put a tablespoon of your favourite Mild to Hot chunky salsa sauce.
Top each muffin with shredded mixture of Jalepeno Montery Jack , Cheddar and Mozzarella cheese. Bake in Oven for 25 mins. Cool for 5-10 mins and spoon each beef muffin out on to plate.

Stuffed Pepper Shrimp and Bean Jambalaya.

1. Make the Rice.
In a oven and stove proof preferably Corning ware melt a tbsp of butter. Add one cup of basmati rice and stir on medium heat while
adding 2 cups water to bring to boil. Once boiling cover with lid and put in preheated oven at 350 to bake for 10 minutes.

2. Marianate the Shrimp
While Rice is cooking in Oven make a mixture for shrimp. Use fresh uncooked deveined shrimp without the shell on.
Mariante them in a bowl with lemon juice ,1/2 tsp chilli powder, 1/2 tsp turmeric powder, 1/2 tsp paprika powder , 1/2 tsp cumin powder, chopped cilantro leaves, and sprinkle salt to taste.

3. Boil the peppers
Cut the top off Peppers and take seeds out from within peppers and boil in boiling water fro 5 to 10 mins. Take out of water and pat dry on paper towel upside down

4. Stirfry the marianated shrimp on high heat with some butter, olive oil and a bit of soya sauce for about 2 mins.

5.Mix the shrimp with the rice that is cooked and out of the oven. . Let the this shrimp rice mixture sit for 10 mins. Take a can of tomatoe soup and pour into a bowl. Spoon the concentrated soup into the rice and shrimp mixture until it is spread evenly.Add as much concentrated soup as you want to make it spread trough the mixture leaving some soup behind if not needed.The amount of tomatoe soup to add will depend on your taste. You can cut and split the boiled peppers in half and pour the mixture into the pepper halves. Top with drained and washed canned black beans and sprinkle with parmesan cheese. Bake in preheated oven at 350 for 35 mins on a parchment paper lined cookie sheet.

Tips:
The Beef Muffins and the Peppers an be placed in the oven together if you do the following ahead of time:
cook the oven baked rice,
boil the peppers and pat dry
marianate and saute the shrimp.
